Coriander Mint Rice

Coriander Mint Rice

This recipe idea was given by my colleague and friend Lini...... who said that the recipe was very easy to make and was liked by her family .....I have been wanting to try this out for some time but kept forgetting .........When I saw fresh mint at home ,I immediately decided to make this rice and within no time it was ready.....

Coming to the taste .....the rice had the fresh flavours of coriander and mint and along with chicken gravy it tasted yummmmm.......My niece Rida who rarely gives a thumbs up for rice dishes and when she did I knew the recipe is worth sharing with you all....

Ingredients:

Basmati rice - 1 cup ( soaked for 30 minutes )
Finely sliced onion - 1/4 cup
Ghee or oil - 3 tbsp
Ginger garlic paste - 1/2 tsp
Whole garam masala - (2 cloves, 1″ cinnamom, 1 Cardamon, 1 star anise, 1 bay leaf)
Coriander powder - 1/2 tsp
Chili powder - 1/2 tsp
Lemon juice -1 tsp
salt to taste
Water - 1 1/2 cup

Coarsely grind ( do not make a paste):

Coriander leaves - 1/2 cup
Mint leaves - 1/4 cup
Green chilies - 2


1 ) Heat oil or ghee add whole spices , bay leaf and sauté for few seconds. Add sliced onions ,sauté till translucent . Add the ginger garlic paste and crushed coriander-mint -green chillies ,and other spices and cook till oil comes out.

2 ) Add the washed rice ,lemon juice and saute for a minute. Add water and bring to a boil. Reduce heat and cover with lid and cook till the rice is done.

3 ) Serve hot with any spicy curry of your choice.


Note : you can add few cashews as it adds flavour.

I saw this recipe few weeks back and wanted to make it but for no reason it was getting delayed .....Haseeb doesn't enjoy these kind of rice so I think twice before making them but off late he enjoys them ....Rayyan is a non fussy child eats everything that's tasty that gave me confidence to try this recipe ....planning to make again but this time with green peas ....I also learnt that chickpea has another name called Garbanzo......

Coming to the taste ....everyone loved the flavour of rice and mom enjoyed it the most and dad after enjoying the dish advised on reducing the spice .....


Ingredients

Basmati Rice - 2 cups ( soaked for 30 minutes )
Boiled Chick pea or garbanzo beans - 1 cup ( you can soak and boil chick pea or use canned one )
Finely sliced onions - 1 cup
Ginger Garlic Paste - 1 tsp
Oil - 3 tbsp
Ghee or butter - 2 tbsp
Asafoetida - 2 pinch
Fenugreek Seeds - 1/2 tsp
Cumin seeds - 1 tsp
Kalonji or onion seeds - 1 tsp
Mustard seeds - 1/2 tsp
Fennel seeds - 1/2 tsp
Green chilly -2 ( slit it in centre )
Coriander leaves - 2 tbsp for garnishing

Mix and make a paste of

Curd - 3/4 cup
Mustard powder - 1/2 tsp ( put the whole mustard in mixer and make it into powder)
Mango pickle -2 tbsp ( any brand or home made )
Turmeric powder - 1/2 tsp
Chilli powder - 1 tsp ( add less if you don't want it to be spicy. )
Coriander powder - 1 tsp
Garam masala powder - 1 tsp
Salt to taste

Method


1) Take a pan and add some ghee and oil , When it gets hot, add mustard seeds and when they crackle, add fennel seeds, kalonji, cumin , fenugreek seeds and fry till you get a nice aroma .

2) Add sliced onions and sauté the onions are transparent, then add green chillies, asafoetida and ginger garlic paste, cook well until the raw flavours are gone.Add chick pea or garbanzo beans and cook in this masala.

3) In a separate bowl take curd ,add mustard powder, coriander powder, chilli pd, mango pickle ,garam masala , salt and mix well. Mix this curd spice into the channa masala and mix well .Cook till oil starts coming out .

4) Add the soaked basmati rice (soak rice for at least 30 minutes and drain the water off). Spread the rice evenly over the channa masala ,don't mix ( just place the rice on the masala

5) Pour water slowly over the rice and check for salt, sprinkle coriander leaves Cover the pan with a lid and cook over slow flame till the rice is cooked and done. Once done,then mix well .

6) Serve hot with Curd Raita

Pau bhaji Corn Pulao

When you come from work plus confused what to cook and in no mood for eating curries thats when these recipes are born ..... This was a super hit among kids.....easy to make and a nice way to finish the left over rice

Ingredients

Cooked rice - 2 cups ( I used leftover cooked rice )
Butter - 3 tbsp
Cumin seeds (jeera. - 1 tsp
Chopped onions- 1/4 cup
Chopped capsicum - 1/4 cup
Chopped tomatoes - 1/4 cup
Boiled corn - 1/2 cup
Chopped Green chilly -1 no.
turmeric powder (haldi)- 1/4 tsp
Chilli powder -1/2 tsp
Pau bhaji masala - 3 tsp
Lemon juice - 2 tsp
Salt to taste

Method

1) Heat the butter on a large tava (griddle) or pan add the cumin seeds,and then onions, green chilly sauté for 2 minutes.

2) Add capsicum and tomatoes mix well and sauté for 2 minutes ,then add turmeric powder, salt, chilli powder, pav bhaji masala , mix well .

4) Add rice and corn , cook for 2 minutes ,add lemon juice and serve hot .

Note: You can use green peas instead of corn ......

The other day after making Nawabi chicken gravy....I was asking sis if she could make a pulao ( she makes good ones ) she said ,will make usual one and I wanted a new recipe but couldn't tell her and was surprised when I saw the pulao .....very simple yet different in taste....kids enjoyed the pulao ...thanx Seema for sharing this recipe ......

Ingredients


Basmati rice - 1 cup ( soaked for 30 minutes )
Green peas- 1/2 cup
Onion ( sliced )- 1
Green chillies - 3 to 4
Ginger - 1 inch piece
Cumin seeds- 1/2 tsp
Bay leaves - 2
Coriander powder- 1 tsp
Garam masala powder - 1/2 tsp
Turmeric powder - 1/4 tsp
Water -1 and 3/4 cups
Oil - 3 to 4 tbsp
Salt to taste


Method

1) Grind ginger and green chillies into a coarse paste.keep aside .

2) Heat oil in a pan on a medium flame, add cumin seeds and bay leaf then add sliced onion and fry till it becomes translucent.

3) Add turmeric powder ,ginger and green chillies paste .Saute it for 1 minute . Then add garam masala powder and coriander powder and mix it well.

4) Add green peas and rice,cook for 2 minutes .Add salt and water.

5) Cover it and cook on a high flame for 5 minutes then reduce the flame to medium and cook for 10 to 12 minutes till rice is done.

6) Serve hot with any gravy of your choice.
